The menu featured at Big Fork Restaurant is a union of Chef/Owner Kevin Diskin's classical technique and his love of global flavors. Kevin's progressive cooking style emphasizes simple use of local ingredients paired with traditional application.

After graduating from the Culinary Institute of America in 1998, Kevin honed his skills working with the renowned chef Georges Perrier at Le Bec Fin and Le Mas Perrier. Kevin has also worked at Gilmores, Novelty, and Jakes.
